80/20 Ground Beef - 80% Lean Protein / 20% Fat
While ground beef is the most popular type of beef sold in the US, not all ground beef is created equal.
The majority of ground beef today comes pre-ground from gigantic meat processors where the likelihood of contamination is far greater, accounting for the mass recalls you might hear on the news from time to time.
We recommend purchasing from specialty butchers who grind the meat themselves from sides of beef they butcher; butchers like us!

OUR GROUND BEEF LOOKS FATTIER, BUT IT ISN'T
This is a custom blend that includes Short Rib, Brisket (30% fat), a bit of chuck and tenderloin (super lean). The overall blend will have a fat ratio of 20% (+/- 2%). It looks fattier because it is a custom blend.
Most grocery stores or those "whatever-box" vendors get their ground meat premade at the slaughterhouse. This product generally consists of ground lean skeletal trim and all the scraps and pieces of lean muscle that are left on the carcass with whole chucks to create an 80/20 blend with a 2% up or down tolerance. They then take those tubes, open them up and throw them in a pack and plastic to wrap it up.
Our ground beef is far different (and superior) as we use high quality prime meats or high grade cuts such as brisket, short ribs or tenderloin.
While our 80/20 ground beef may look fattier to a grocery store packet, it is not. The USDA oversees our process and claims. Every time we make a batch, the USDA inspector checks it for compliance.
