When you are looking for garlic flavor and texture, then garlic flakes should be your choice. When cooking with liquids flakes are perfect to be added directly to dishes like chili, soups, stews, casseroles, dressings, gravies, sauces and marinades, pickles, and dressings. You can rehydrate the flakes by first soaking them in cool water for 30 minutes. Use 3 /4 teaspoon garlic flakes in place of one fresh garlic clove.
